Vegetarian Summer Fare! - By Ravigo Zomana RICE SALAD Ingredients: 1 cup long grain rice 2 cups low fat vegetable boullion or broth 1 cup green peas 1 small onion, finely chopped 1 tomato, chopped 1 green pepper, chopped 1 cup low fat plain yogurt (PLAIN, not vanilla) 1 cup low fat or non-fat mayo salt, pepper, garlic powder to taste Directions: Place rice in skillet with non-stick spray, and cook until slightly tan in color. (Stir often, and be careful to not burn rice.) Add broth and simmer until rice is done. While rice is cooking, mix together yogurt, mayo, seasonings and vegetables and place in refrigerator. When rice is cool, add to the mixture and mix well, so that rice is coated. Let sit in refrigerator for at least an hour or until well-chilled.
