Beyond Turkey Thanksgiving Dishes for Vegetarians and Their Friends - By Michele Spring-Moore Stuffed squash
Makes a great main dish. Cut in half one medium-size winter squash for each person. Place cut side down on a baking sheet coated with olive or canola oil. Bake at 350 degrees until tender when pierced with fork all the way through -- usually 60 to 90 minutes. Cool and stuff with your favorite vegetarian stuffing (I use the recipes in the _Moosewood Cookbook_). Before serving, cover baking sheets or casserole dish with aluminum foil and bake at 350 degrees until heated through, about 30 minutes.
