To Prepare the Meal

Roasted Red Peppers with Goat Cheese

To roast a red pepper you need either a grill or a gas stove. Place the red pepper on the grill or directly on the burner of the stove. The pepper skin will turn black as it roasts. Turn the pepper and keep cooking until the entire skin is black and begins to flake off. When the pepper is done, peel all of the skin off of the pepper. Cut off the top and empty out the seeds in the middle. Slice the pepper into strips about the size of your pinkie finger. In a bowl, mix ¼ cup of balsamic vinegar and ¼ cup of extra virgin olive oil. Marinate all of the roasted red pepper strips in the oil and vinegar mix for between 15 minutes and 8 hours.

To serve:

Put the goat cheese in the center of the plate.

Arrange the peppers around the cheese and the crackers around the peppers.

Feed your beloved a cracker with a smear of goat cheese and two slices of peppers.
